RECIPE: Halloumi with sundried tomato farro
Have you tried out farro?
It is a type of wheat that has a very similar texture and taste to brown rice. Farro is not gluten free Inbut is signficantly lower in gluten than other wheat grains.
Ingredients needed for this (this recipe serves 2:)
Halloumi (About 125g or half a packet)
Farro (about 130g)
Half a cucumber
Sundried tomato (30g)
2 Spring onions
1 large tablespoon of tomato puree
A teaspoon of Chilli flakes
Mixed seeds - 2 tablespoons
A bunch of parsley
A bunch of Mint
Fill a medium saucepan with salted water, place over a high heat and bring to a boil.
Once water comes to the boil, add the farro and cook according to the instructions.
In the meantime prep the dressing for the farro.
Mix together the zest & juice of the lemon, the tomato puree, the olive oil and the chilli flakes.
Season with salt & pepper.
Dice the cucumber, sun dried tomatoes & spring onions
Chop the parsley and mint leaves - you can disregard the stalks
When the farro is nearly ready start heating up a frying pan
Put a small amount of oil on the pan and fry the halloumi for a couple of minutes on both sides to give it a nice golden colour
Once farro is ready strain using a colander and add the cucumber, sundried tomatoes, mixed seeds and the dressing.
Mix well together
At the last minute add the parsley, mint & spring onions
Serve halloumi on bed of the farro salad
Add seeds just before serving
Its that easy…if you don’t have farro don’t be afraid to try this out with a different grain or add different veggies or herbs.
